Sorbets without added sugar


Freeze ripe, flavorful fruit, diced or sliced.
Grind them still frozen using the crusher cone, when serving.
Mold as for a sorbet. Do not freeze again.

Coconut milk chocolate ice cream See our full recipe

Ingredients
  • 200 ml coconut milk
  • 50g 70% chocolate
  • 3 tbsp honey
  • 1 pinch cinnamon
Tools
  • crusher cone
  • tip: none
  • plastic ice cube bags
Recipe
  1. Melt the chocolate in a bain-marie
  2. Beat the sugar with the coconut milk
  3. Mix everything, let cool
  4. Incorporate into the ice cube bags and place them in the freezer
  5. When they are well frozen, unmold them fairly quickly and pass them through the Jazz fitted with the crushing cone. Help with the pestle and do not let the preparation turn too long around the screw, it defrosts quickly.
