Carrot cake Halloween version

A healthy and delicious pleasure, a treat that will delight young and old alike ;-)
- 450 g peeled carrots
- 300 g flour
- 200 g honey
- 100 g walnuts
- 4 eggs
- 90 g coconut oil
- ½ tsp speculoos spices
- Insert the whole peeled carrots and nuts into the Jazz extractor fitted with the crushing cone, alternating the ingredients and respecting the speed of the extractor. Set aside these crushed foods.
- Melt the coconut oil over very, very low heat.
- Mix the coconut oil and honey. Add the egg yolks and mix.
- Add the crushed foods, flour and spices to the resulting dough. Mix.
- Beat the egg whites until stiff. Add them to the dough and mix gently.
- Pour into a mold giving the desired shape. Bake in an oven at 175°C for 40 minutes.
